I’m a working mom of 2 boys- one in school and one learning to crawl. I started freezer cooking because when I got home from work each afternoon, my husband was getting ready to go to work and the thought of cooking for just myself and 1 other solid food eating boy was depressing. Too often I was hitting the drive thru because by the time I realized it was dinner, it was way to late to crack open the cookbooks and start wondering if I had the right ingredients to make what I had finally chosen. Freezer cooking and doing it once a month has saved my pocketbook, and caused us to eat much healthier. We now start the week with a menu plan and there’s no more “what’s for dinner?” Having lunches ready to go in the freezer and breakfasts too have made the mornings a lot less hectic!
